What Makes Mexican Cowboy Street Kitchen Stand Out in the Authentic Mexican Restaurant Scene?

David Martinez, co-owner of the Mexican Cowboy Street Kitchen food truck, sat down with Eat Drink Local Texas to discuss the business, how it differs from Tex-Mex cuisine, its family-friendly environment, and its commitment to San Antonio even with expansion plans.

San Antonio, Texas - If you're craving genuine Mexican cuisine in San Antonio, look no further than Mexican Cowboy Street Kitchen! Owned and operated by David Martinez and Rosa Maria Rivera, this beloved food truck has been serving up delicious and authentic Mexican street food for the past six years. Unlike the typical Tex-Mex offerings throughout the city, Mexican Cowboy Street Kitchen stays true to its roots, offering dishes straight from Mexico.

David Martinez wants to clarify this: Mexican Cowboy Street Kitchen serves authentic Mexican food.

"We have street tacos, quesadillas, loaded fries, birria tacos, and more," David proudly shares.

But what they don’t serve is just as important. There are no Tex-Mex dishes like puffy tacos, carne guisada, or enchiladas with gravy here. Mexican Cowboy Street Kitchen is committed to authenticity. It’s their way of bringing a taste of Mexico to the heart of San Antonio, and their loyal customers can taste the difference!

Before it became a San Antonio food truck staple, Mexican Cowboy Street Kitchen started as a sit-in restaurant. Rosa Maria Rivera originally opened the restaurant with David as the cook. Though the restaurant had a successful five-year run, the couple saw an opportunity to switch gears and take their business mobile. For the past six years, their food truck has been a popular spot known for its welcoming atmosphere and mouth-watering menu.

One of the standout features of Mexican Cowboy Street Kitchen is its family-friendly environment. The food truck is in a great location, offering outdoor seating perfect for enjoying your meal while the kids play.

"We have umbrellas for shade, a playground for the kids, and even toys for them to play with," says David. "Every time little boys come, the first thing they do is run straight to the toys."

It's not just the food that keeps families returning— the whole experience.

While David and Rosa Maria are happy with their current setup, they always consider the future. One exciting idea they’ve been considering: a second food truck focused on Mexican-style desserts!

"I’ve been thinking about Mexican funnel cakes—like Cajeta funnel cakes, Lechera funnel cakes, and things like that," David explains.

While nothing is official yet, one thing is clear: Mexican Cowboy Street Kitchen will continue to serve authentic Mexican food to the San Antonio community, and they're only just getting started.
