COLIFLOR ASADA - A roasted head of cauliflower drizzled with our chile Morita mayonnaise, sprinkled with Parmesan cheese, cilantro, and a drizzle of paprika oil.
"We aim to modernize Mexican cuisine, make it approachable and memorable," George Luis, Executive Chef of FRIDA, told Eat Drink Local Texas in an interview, "to do that, we make traditional Mexican dishes and elevate them." The robust flavor in each dish at FRIDA's comes from colorful, traditional ingredients such as huitlacoche and a variety of chiles and meats hand-picked to represent the culinary culture in Mexico. While there are many items on the menu to choose from, the way many high-quality ingredients are utilized is most evident in the wide selection of tacos offered, which include but aren't at all limited to: "Tacos Short-Rib a las Brasas," Tacos de Trompo," and "Cachetada de Rib-Eye." The bar inside the establishment is also noteworthy, with many flavorful and balanced handcrafted tequilas and whiskeys that pair nicely with menu items.
