Experience the Taste of Texas: The Hidden Gem of Fredericksburg's Wedding Oak Winery

Discover the Unique Flavors and Sense of Community at Wedding Oak Winery in Fredericksburg, Texas!

Fredericksburg, Texas - March 28, 2023- Nestled in the heart of Fredericksburg, Texas, is a hidden gem that every wine lover should visit: Wedding Oak Winery. Founded a little over a decade ago, Wedding Oak Winery is named after a 400-year-old oak tree in San Saba. This winery's mission is to be a gathering place for the community and to recreate the feeling of gathering around the giant tree by using 100% Texas fruit in its wines.

“We try to stay true to our Texas traditions and roots, and our wines reflect that," said Seth Urbanek, winemaker.

The winery produces a wide range of wines, including reds, whites, and rosés, using grapes sourced from some of the best vineyards in Texas. The winemaking team, led by winemaker Seth Urbanek, is committed to producing high-quality wines that are a true reflection of the Texas terroir. The winery also partners with local pecan farmers and creates unique pairings between pecan products and wine.

The Reconcilable Differences 2020 wine, my personal favorite, is a delight for the senses. With a translucent ruby center and a watery rim, this Spanish-style red blend boasts aromas of cranberry, raspberry, leather, earth, and allspice. The palate is treated to a delicate wine with superbly soft tannins, making it a great option for drinking at any time.

The winemaking process at Wedding Oak Winery starts in the vineyards. The winery works closely with its vineyard partners and walks through the vineyard rows, examining the fruit and the growing conditions. Once the fruit is harvested, the winery stewards it into great wine, which requires a bit of art and science. While there is some science involved in the winemaking process, the blending process is more of an art that involves creating the best product that consumers will enjoy.

One of the reasons why the Wedding Oak Winery chose to be set up in Texas is because the story of Texas wine is still being written. Texas wine is still a relatively new story, and they are experimenting with different varietals to see what works best in the state’s unpredictable weather.

“To me, being a part of that story is super cool," Urbanek said.

Interacting with customers in the tasting rooms and introducing them to new and unique wines made from unfamiliar grape varietals is part of the fun. While there are certainly challenges that come with grape-growing and winemaking in Texas, the winery is dedicated to finding the best solutions and producing high-quality wines.

But what really sets Wedding Oak Winery apart is its commitment to farm-to-bottle winemaking. They grow many of the grapes used in their wines in their own vineyards. Thus, they can ensure that their wines are made with the utmost care and attention to detail. This means that every bottle of wine is made with the freshest, highest-quality ingredients possible.

“If you get the right Texas grapes in the hands of the right Texas winemaker. Texas wines can challenge any single one of those from a qualitative perspective. So why not serve farm-to-bottle?”
